Chocolate-Peanut Butter Fat Bombs

So, I stumbled upon a neat recipe for chocolate peanut butter fat bombs.  I made the original, then I made up my own, putting my own spin on Lee’s recipe.  Everyone loved them! Here’s my version of Chocolate-Peanut Butter Fat Bombs.

Total Time: 2 hours 15 minutes

Prep Time: 15 minutes
Yield: 24 regular cupcake-size (about half way filled) / 48 mini cupcake-size

Ingredients

Instructions

  1. Line the cupcake pans with liners
  2. In a medium bowl, mix the peanut butter and coconut oil with a hand-held mixer or Kitchenaid mixer on low speed until uniform in consistency and color.
  3. Gently stir in the cocoa powder to the peanut butter-coconut oil blend.  Don’t use the mixer.  Use a spoon, or cocoa powder might go everywhere (like it did in my kitchen).
  4. Mix in the maple syrup or preferred sweetener to taste.
  5. Spoon the mixture into the cupcake pans evenly.  Fill the regular cupcake pan with a little less than half way — this is about 2 to 3 tablespoons.  If making mini-cupcake size, you can fill each one about with about 2 tablespoons — they will be a little more than 2/3 of the way full (not quite to the top of the liner).
  6. Sprinkle with just a bit of coconut macaroon.
  7. Place the cupcake pans in the freezer.  After about an hour or 2, the fat bombs will be ready. Note: Be sure to keep them stored in the freezer. They will melt at room temperature.  

Keto Friendly?  Yes! This recipe can be made keto friendly by using a maple syrup substitute, like Lakanto Sugar Free Maple Syrup.  I haven’t made the sugar free version yet so I don’t know exactly how much would be needed.  When I do make it, I will let you know how much of the Lakanto sugar free syrup to use. If you want to give it a shot, try to put in only 3 tablespoons then taste the mixture.  If it is not sweet enough, add a bit more until it tastes amazing!

Summer Pitta Salad (Keto-friendly)

Summer Pitta Keto SaladThis is a great Ayurvedic recipe for a summer party!  A great side dish!

 

Summer Pitta Pasta is the original recipe, which I highly recommend.  But I also love to put my own spin on recipes.  So, I tried my creativity out on this one, and it turned out super yummy!

 

I started with the original Summer Pitta Pasta recipe, but then made it keto-friendly.

 

My mom recently started the keto diet, and we just celebrated the 4th of July holiday where I made this keto version for her.  I also made the original — they were both delish!

 

In the keto version, I subbed riced-cauliflower for the pasta and skipped the breadcrumbs. I also added freshly-squeezed lime.  It was YUMMY!  My mom even used her version as filler for lettuce wraps and that was delicious, too!

 

I LOVE COOKING and putting my own spin on recipes.

 

This is my keto-friendly version recipe:

 

Ingredients

  • 2 cups riced cauliflower (cauliflower finely chopped, nearly minced)
  • 3 tbsp of ghee
  • Pinch of hing (optional)  (also known as asofetida and can be purchased on Amazon)
  • 2 cups fresh green beans, trimmed and cut into 1 inch pieces
  • 3 cups zucchini or yellow squash, diced
  • Himalayan pink salt (to taste)
  • ½ cup finely-chopped fresh basil
  • ½ cup  finely-chopped flat-leaf parsley
  • ¼ cup minced fresh mint
  • Black pepper
  • ½ of a lime

Directions

  1. Over low-medium heat, add ghee to a skillet and a pinch of hing (not much — it can be strong).
  2. Turn the heat up to medium.  Then add the green beans, cover, and sauté 3 minutes, stirring often.
  3. Add the zucchini or squash to the skillet.  Salt to taste.  Cover and cook on medium-low heat until the squash becomes tender (about 8 minutes).  Keep covered and stir the mixture occasionally. When it is tender, remove from heat and allow to rest.
  4. Steam the cauliflower.  There are several ways you can steam — this is just one way.  Add about a cup of water in a pan and place over high heat.  Place the cauliflower in a steamer pot.  When the water begins to boil, place the steamer pot over the pan of water.  Allow the cauliflower to steam about 5 to 7 minutes or until it begins to become tender.
  5. In your large serving bowl, add all ingredients:  Cauliflower, green beans, squash, basil, parsley, mint, and black pepper (to taste).  Squeeze the lime.  Add salt to taste.  Stir and serve.  Can be enjoyed fresh and warm, or chill and serve — your choice!

You are Beautiful … But I Don’t Think You Believe Me

Do you know how beautiful you are?

You are… So very beautiful.  So very cherished.  So very loved.

Amazingly Beautiful.

If you were the only soul on this planet, God would still be here with you and draw you to him.

He would have found a way to bring you near to him because he loves you so very much and knows how special and valuable you are.

How can you know this when society blasts over and over again that beauty is size 0 and young?  Ridiculousness.  You are true beauty. You. Not your physical appearance.  Not your mind.  Just you. The true you at the core of your being.  You are truly beautiful.

Beauty is life. Beauty is an attraction to something greater. You feel it.  You know it.

A deep knowing that we are more than what we perceive.  Listen with your soul, and you can hear it.  Sense your intuition, and you can feel it.  So do I.

Breathe.  And know it to be true.

Guiding Yoga Nidra: Where to Start

I received an excellent question on where to begin on guiding Yoga Nidra.

I want to learn how to guide Yoga Nidra. Do you recommend a teacher?

To answer this question, Kamini Desai and Julie Lusk seem to be good teachers.  Their books include scripts.  Anyone can begin guiding Yoga Nidra as soon as they are ready:

I believe both Ms. Desai and Ms. Lusk offer Yoga Nidra Teacher Training; although, these trainings would not be required to begin guiding Yoga Nidra.

However, if you want to pay to attend trainings or yoga festivals, below are some good resources, but doing so is not required to begin guiding Yoga Nidra.

iRest Method

If you are looking to lead Yoga Nidra for individuals working through emotional trauma from PTSD, the iRest method by Richard Miller is wonderful.  I met Molly Birkholm in Sedona last year.  She is a sweet and wonderful person, and she has her own iRest training program.  According to her website, her next training is in Chicago, September 3-9, 2019.

I AM Method

Another great technique is the I AM method by Kamini Desai with the Amrit Institute in Florida.  This is a link to these upcoming trainings.   Ms. Desai has a really great book Yoga Nidra: The Art of Transformational Sleep.  It comes with a Yoga Nidra script.

Yoga Nidra Teacher Training in Yogaville by Julie Lusk

I am currently reading a book by Julie Lusk called Yoga Nidra for Complete Relaxation and Stress Relief.  So far it is WONDERFUL!  Ms. Lusk also includes a Yoga Nidra script and lots of great information.  Ms. Lusk offers Yoga Nidra trainings in Virginia.  This is the link to the details on her training: https://wholesomeresources.com/schedule-2/yoga-nidra-teacher-training/.

Sedona Yoga Festival

Finally, the Sedona Yoga Festival (SYF) is coming up in March.  If it is something that interests you, you could attend all Yoga Nidra workshops they offer; although, none of the workshops offer any type of certification (that I know of).  The festival could give you a really good taste of what is out there, and you might get to meet the leaders in their fields.  I attended the excellent PTSD training as well as the festival in 2018.  That is how I got to meet Ms. Desai and Ms. Birkholm.  I think the festival is every year around February or March.

My Journey

So far on my journey, I have learned that not all Yoga Nidra is the same.  There are different techniques.  All techniques are good and serve their purpose.  Personally, I learned about Yoga Nidra while going through yoga teacher training. The method I use is the 8-stage technique taught by Satyananda Saraswati, with the exception that I begin the rotation of consciousness on the right hand thumb instead of beginning at the third eye.  For some reason, this rotation method has been more effective for me, so that is why I use it when I guide Yoga Nidra.  His book is on Amazon at this link: Yoga Nidra.

My first Yoga Nidra experience was with this recording by Rod Stryker, who is with the Himalayan Institute.  It was great!  It was like time travel yoga!  The Himalayan Institute’s method is called Para Yoga.  I do not think the Himalayan Institute has Yoga Nidra trainings, but I could be wrong.  They might offer something once in a while.

I have listened to GS Renfrey’s Yoga Nidra meditation many times, and I still have not heard all of it in the awakened beta-brainwave state.  However, what I have heard is so reassuring and calming and helps me get into the meditative state.  I highly recommend it for practitioners at any level.
